Acapulco Chicken recipe
2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 tbls chili powder, divided
salt and pepper to taste
1 tbls olive oil
150 g (5 oz) chopped green bell pepper
(3 oz) chopped onion
2 jalapeno peppers, seeded and minced
1 large tomato, cut into chunks
10 drops hot pepper sauce
Season chicken with 1/2 tablespoon chili powder, salt and pepper. Heat oil in a large skillet over medium high heat and
sauté seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.
In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon
chili powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more.

Chicken Crumble recipe
1 Cooked Chicken
1 cup mixed veggies
1 cup pumpkin soup mix
1 1/2 cups trim milk
1 cup bread crumbs
1 1/2 grated edam cheese

Remove chicken from the bone and place in a roasting tray, sprinkle veggies on top. Mix soup mix with milk and pour over
veggies and chicken stir to combine..
Mix breadcrumbs, parsley and cheese together and sprinkle onto chicken mixture..
bake 30-45mins in mod oven, serve with a simple potato bake consisting of sliced potatoes, kumara, onions, and a cheese sauce.

Cranberry And Almond Bircher Muesli recipe
2 tbsp almonds, toasted and chopped
2 tbsp plain yogurt
1 tbsp liquid honey
1/4 cup dried cranberries
1 cup anchor xtra milk
3/4 cup rolled oats
Before serving, divide the Muesli between two serving bowls and top with or stir in, the honey,
yogurt, almonds and extra Anchor Xtra if desired. In a bowl, combine the rolled oats, Anchor Xtra milk and dried cranberries. Cover and chill overnight.

Firecracker Grilled Salmon recipe

1 kg (2 lbs) salmon
1/2 cup peanut oil
4 tbls soy sauce
4 tbls balsamic vinegar
1 oz green onions, chopped
1 tbls brown sugar
2 cloves garlic, minced
1 tsp ground ginger
1 tsp crushed red pepper flakes
1 tsp sesame oil
1 tsp salt
Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.

Grilled Lamb Chops recipe

1/2 cup olive oil
1/2 cup red wine vinegar
1/4 cup white wine
2 tbls lemon juice
2 cloves garlic, peeled and minced
1/4 cup minced onion
1/2 tsp dried tarragon
1/2 tsp chopped fresh parsley
1/2 tsp black pepper
380 g (3/4 lb) lamb chops
In a large, container, blend the olive oil, red wine vinegar, white wine, lemon juice, garlic, and onion together and then season with tarragon, parsley, and pepper. Place the lamb chops in your mixture. Cover, and marinate in the refrigerator for about 2 Hrs.
Preheat an outdoor grill or BBQ for high heat, and lightly oil the grate.
Grill your lamb chops on the prepared grill for about 5 Min. per side, or until done to your taste. Enjoy

Bean Baked Potato recipe

8 medium potatoes, washed
1 425g (14 oz) can chopped tomatoes
1 onion, chopped
1 teaspoon crushed garlic
1 425g (14oz) can chili beans
1 tablespoon olive oil
Prick the skin of the potatoes in several places and place them on some kitchen paper around the edge of your microwave turntable. Now cook the potatoes uncovered, on high for about 12 minutes or until they become tender. Or bake in a hot oven, at 200 degrees C, for about 1 hour or until tender
Cut a cross in the top of each cooked potato and gently push inward to open. Spoon your toppings into and over the potatoes.
Filling:
Heat olive oil in a pan and sauté the onion and garlic until soft. Add your chili
beans, tomatoes and mix while heating through. Spoon this into your baked potato. Top with something like, grated cheese, grated carrot, diced tomatoes, diced cucumber, shredded lettuce and optionally top with
light sour cream.

Eggless Tofu Spinach Quiche recipe

224 g (1/2 lb) tofu
80 ml (3 fl oz) skim milk
1 tsp salt, or to taste
1/4 tsp pepper
284 g (9 1/2 oz) frozen chopped spinach, thawed and drained
1 tsp minced garlic
40 g (1 1/2 oz) diced onion
1/2 cup shredded Cheddar cheese
1/2 cup shredded Swiss cheese
1 unbaked 9 inch pie crust
Preheat oven to 350 degrees F (180 degrees C).
In a blender, combine tofu and milk; process until smooth, adding more milk if necessary. Blend in salt and pepper.
In a medium bowl, combine spinach, garlic, onion, Cheddar cheese, Swiss cheese and tofu mixture. Mix well, and pour into prepared pie crust.
Bake in preheated oven for 30 minutes, or until set and golden brown on top. Let stand 5 minutes before cutting.

Cajun Pork Chops recipe

30 g (1 oz) all-purpose flour
1 1/2 tsp paprika
1/4 tsp ground sage
1 tsp Creole seasoning
1/4 tsp cayenne pepper
1/2 tsp black pepper

4 boneless pork chops about 1/2 inch thick
2 tsp olive oil
Place flour, paprika, sage, Creole seasoning, cayenne pepper, black pepper, and garlic powder in a large,
re-seal able plastic bag. Now also place the pork chops in the bag, seal, and shake to coat all the chops.
In a large skillet, heat oil over high heat for about 1 minute. Arrange chops in pan, and reduce heat to medium. Cook until pork chops are dark brown, for about 6 to 8 minutes a side.

Bacon and Cheese, Potato Tart recipe

18 slices bacon
1 1/2 pounds potatoes, peeled and sliced
1 1/4 cups shredded cheese
salt and pepper to taste
Preheat your oven to about 200 degrees C or 400 degrees F. Coat an 8 inch round baking dish with the butter. Now arrange the bacon slices in a spiral around the baking dish, draping the ends of the slices over the pan's edge, to later fold back over the filling.
Arrange 1/3 of the potatoes over the bacon slices, and sprinkle with 1/3 of the cheese. Repeat layers with remaining potatoes and cheese, and season with salt and pepper. Now fold the bacon back over the filling to form the upper layer. Bake uncovered in your preheated oven for about 1 hour, or until potatoes are tender. Drain any drippings, and cut into wedges to serve.

NY Style Cheesecake recipe

For cookie crust:
1 Box Crushed Vanilla Wafers
1/2 stick melted butter (about 56grams)
Combine ingredients and fit into bottom and sides of a 91/2 spring-form pan.
For cheesecake:
1 1/2 lbs cream cheese, room temperature
3 large eggs
1 1/3 C sugar
2 tbsp flour
2 tsp grated lemon rind
1 1/2 tsp vanilla
2 tbsp Heavy Cream
Combine cheese and eggs. Beat with electric mixer till perfectly smooth. Then, add while continuing to beat, sugar, the flour, and flavorings. Pour into the prepared pan. Bake at 325 degrees F for 70 - 75 minutes. Turn off heat and let cool in oven. Do not open the spring-form pan until completely cool. Asian-Style Lettuce Wraps recipe

16 Butter lettuce or similar leaves
455 g lean ground beef
15 ml cooking oil
1 large onion, chopped
2 cloves fresh garlic, minced
15 ml soy sauce
60 ml Hoisin sauce (also called Chinese barbecue sauce)
10 g minced pickled ginger
15 ml rice wine vinegar
Asian chili pepper sauce (optional)
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
10 ml Asian (dark) sesame oil
Rinse the whole lettuce leaves and pat them dry, be careful not to tear them. Set them aside. In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reduce the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chili pepper sauce to the onions, and stir.
Stir in chopped water chestnuts, green onions, and sesame oil, and continue cooking until the onions just begin to wilt, about 2 minutes. Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito, and enjoy!

Crumbed prawn cutlets recipe

2 x eggs, beaten
1/2 cup Seasoned flour
2 x cups Breadcrumbs
500g Prawns, peeled, deveined and butterflied
Tartare sauce
Oil for frying
Salad to serve
Put the flour, eggs and breadcrumbs all in separate bowls. Start the process by dipping the prawn pieces into the flour, then the eggs and then the breadcrumbs. Arrange prawns on a baking tray and chill for 15 minutes.
Heat enough oil in a large frying pan to shallow fry prawns in two batches for about 1-2 minutes or until golden, turning occasionally. Remove from oil and drain on a paper towel. Serve with tartare sauce and salad if desired.

Creole Seasoning II recipe
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano leaves
2 tablespoons dried sweet basil
1 tablespoon dried thyme leaves
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon cayenne pepper
1 tablespoon celery seed
5 tablespoons sweet paprika
How to Prepare :
Combine all the ingredients and mix well. Store in an air tight container.

Marinated Feta Salad recipe

Pork Loin Chops with Rosemary and Balsamic Onions recipe

2 tsp Minced Garlic
8 Short Sprigs Fresh Rosemary
Balsamic Vinegar
1 c Watercress Sprigs or Baby Salad Greens to serve
Ciabatta Bread
3 Red Onions, cut in quarters
4 Pork Loin Chops
Olive Oil
Salt
Black pepper
Marinate the pork loin chops for 30 minutes with a little olive oil, the garlic, rosemary and a grinding of pepper.
Meanwhile place the onion wedges in a roasting dish and sprinkle a little olive oil and balsamic vinegar over them. Season generously with salt and pepper.
Cover dish with foil and roast at 180 degrees C for 20 minutes, then remove the foil.
Place the pork chops on a rack over a roasting dish, and cook them beside the uncovered onions for 12 to 15 minutes until cooked through.
Serve with watercress salad and a little more balsamic vinegar sprinkled on the onion

Braised Lamb Shanks (I) recipe
2 large white onions, chopped
4 lamb shanks
1 pint dry red wine
1/2 pint balsamic vinegar
80 ml (3 fl oz) olive oil
4 cloves garlic, pressed
2 lemons, quartered
2 (14.5 ounce) cans diced tomatoes
1 bunch fresh basil, chopped
1 tbls salt
1 tsp cracked black pepper
How to Prepare :
Preheat your oven to 350 degrees F or 180degrees C.
Place the onions in a layer in the bottom of a Dutch oven or medium roasting pan with a lid. Arrange the lamb shanks on top of the onions.
Now pour the wine, balsamic vinegar and olive oil over the lamb. Place a clove of pressed garlic next to each shank, and a quarter of a lemon on each side. Pour the tomatoes over everything and then season with salt, pepper and basil.
Cover and place in the oven. Cook for about 3 hours. The juices from the pan can be used to make nice gravy.
