Crab & Shrimp Party Dip
8 oz 100% crab meat
4oz cooked salad shrimp
12 oz pkg. cream cheese
3 tbsp finely chopped green onion
1/4 cup mayo
2 tsp. ketchup
2 tsp. chili sauce

This one is really easy... mix everything, chill and serve with crackers. This is very tasty!

Barbecued Shrimpwiches
1/4 lb. cooked shrimp meat
1 tsp. vinegar
3/4 cup shredded cheddar cheese
2 tbsp Worcestershire sauce
1/4 cup Mayo
1/4 tsp pepper|
6 split & buttered hot dog buns

Mix shrimp, cheese, Mayo, vinegar, pepper, and Worcestershire sauce. Spread mixture on hot dog rolls and wrap securely in foil and refrigerate until ready to use. Barbecue over medium heat for 20 to 25 minutes or bake at 350' F for 15 to 20 minutes.
 

Homemade Batter for fried fish
11/2 cups all purpose flour
3 Tsp. baking powder
1 tsp salt
1 cup milk
2 eggs, well beaten

Mix and sift dry ingredients. Add milk to eggs. Pour liquid into dry mixture and beat until smooth. Dip fish, haddock or cod, into this mixture and fry in 350 degree deep fat until golden brown. Enjoy!

Shrimp and Pasta Casserole
1&1/2 cups uncooked pasta shells
1/2 lb cooked peeled shrimp
1/2 LB cottage cheese
1/2 cup coleslaw
salad dressing
1/4 cup fine bread crumbs
1/4 cup chopped onion
1 tsp. chopped parsley
1/4 cup Parmesan cheese
1 tsp. melted margarine

Cook pasta shells and rinse with cold water. Put 1/2 of the pasta in a greased baking dish. Combine shrimp, cottage cheese, & salad dressing in bowl then spread over pasta. Top with remaining pasta. Mix bread crumbs, onion, parsley, Parmesan cheese and margarine in a small bowl. Sprinkle over casserole. Bake at 350 degrees F for 30 minutes or until bubbly. 4 delicious servings. Fresh bread and a cool glass of white wine go well with this dish. Enjoy!

Tasty Trout Teriyaki
1 cup soy sauce
1 clove garlic
1/2 cup sugar
1 tbsp sesame seed
2 tsp. ginger root, finely grated
1/2 tsp. butter
2 lbs. Boneless trout fillets

Marinate trout in soy sauce, sugar, ginger and garlic for two hours. In a small bowl, mix sesame seeds and butter; microwave 45 seconds on high. Place fish in an 8 x 8 inch glass dish with 2 tbsp. marinade and toasted sesame seeds. Cover and microwave 10 minutes on high or until trout flakes easily. Serves 6 reasonable servings or 4 BIG eaters! If you have any left over, make a toasted sandwich with a bit of Mayo on it the next day. This will cause you to make too much the next time too, just wait and see. Enjoy - remember "You can do a lot worse things in life than eating well."

Coleslaw for 8
Shred a 2 LB head of cabbage
3/4 cup Mayo
11/2 tablespoon lemon juice
1/2 tsp salt
1/4 tsp white pepper
1/4 tsp dry mustard
1/2 tsp sugar

Soak the cabbage in cold water in a large bowl for 1/2 hour. Drain. Combine Mayo, lemon juice, salt, pepper, dry mustard, & sugar in a small bowl. Pour over cabbage; toss to mix. Chill for an hour or longer. Now here's a tough one: to cut to 4 servings use 1/2 of the ingredients. Enjoy this with your favourite fish or fish and chips.

Teriyaki Salmon Fillets
1 cup teriyaki sauce
1 tbsp peanut oil
3 tbsp chopped parsley
1 clove garlic, crushed
1/2 tsp ground pepper
6 Fresh salmon fillets

Mix the first five ingredients in a bowl. Add salmon fillets and let stand for an hour, turning fillets every 20 minutes. Place fillets on a sheet of heavy foil and grill 4 to 5 minutes, basting with sauce. Turn fillets and grill for 3 more minutes. Serve hot or cold. Yum yum in my tum!

Crab Meat Divan for Four
2 broccoli cooked and drained
1 pkg 8oz. cooked crab meat
1/3 cup Mayo
1/2 tsp prepared mustard
1&1/2 tsp lemon juice
1 tsp grated onion
1/2 cup shredded cheddar cheese

Layer broccoli and crab meat in a baking dish. Mix Mayo, mustard, lemon juice, and onion in bowl. Spoon over crab meat. Top with cheese. Bake at 350 degrees F for 20 minutes. Delightful!

Scallop Casserole
1/2 cup butter
1 cup butter cracker crumbs
2 cups scallops
2/3 cup whipping cream
1/2 cup soft bread crumbs

Mix melted butter with cracker crumbs in a bowl. Layer crumb mixture, scallops and cream 1/2 at a time in buttered baking dish. Sprinkle with bread crumbs. Bake, covered at 350 degrees F for 20 minutes or until bubbly. Bake uncovered, for 5 to 10 minutes or until brown. 4 servings of a scallop lovers dream! Enjoy!

Clam Stuffing for Fish
1/2 cup chopped onion
8 oz. clam meat (shucked)
1/4 cup butter
salt, pepper, nutmeg
2 cups buttered crumbs
2 eggs well beaten
1/4 cup chopped parsley

Sauté onion in butter. Combine with the crumbs, parsley, clams, salt, pepper and nutmeg to taste, and the beaten eggs. Moisten with a little water if too dry. Mix well, stuff fish, and bake. Here's a tip. Put 1/4 inch lemon slices on top of the fish, this helps keep it moist! Do it! It will be good!

Fish Cakes
3 cups mashed potatoes
8 oz. cooked salmon fillet
1 tsp. onion juice
1/2 tsp mustard
1 egg
Bread crumbs
salt

Mix potatoes, salmon and salt, add onion juice. Make into small cakes. Beat egg, add mustard. Roll cakes in egg, then in bread crumbs. Fry in cooking oil. Yum Yum! If you don't want to bother we have a fish cake already prepared at our store made from salmon, haddock and no potatoes. They're good too. Heat and serve. See ya in fish land.
