Coconut and white chocolate chip cookies.
Ingredients:
125 grams butter
1 cup sugar
1/2 teaspoon vanilla
1 egg
1 cup plain flour
1 cup self-raising flour
1 cup coconut
2/3 cup chocolate chunks (I used chocolate bits)
Method:
Preheat oven to 180 degrees C. Beat butter, sugar and vanilla in a electric mixer until light and creamy. Add egg and beat well. Mix through the coconut and flours with a knife (I used a wooden spoon) until soft dough is formed. Mix through chocolate.
Using your hands, mold 2 tablespoons of mixture in to a flat round. Repeat with remaining mixture.
Bake for aproximately 15 minutes. You may need to vary the cooking time slightly. Cooking is all about trying new and different things, and varying a recipe if needed. Don't be frightened of doing this. Some of the best recipes come out purely by accident.
CHOCOLATE PUDDING (700 Watts)
1 cup self rising. flour
1 tsp vanilla
1/4 tsp salt
1/2 cup brown sugar
1/4 cup milk
3 Tbs butter, melted
1/2 cup sultanas
1/2 cup brown sugar, firmly packed
2 1/2 Tbs cocoa
1 1/2 cups boiling water
Combine the first six ingredients in a deep, round casserole dish
and mix well. Stir in the sultanas and smooth the top of the
mixture. Combine the remaining ingredients in a jug and carefully
pour over the pudding mixture. Cook, elevated and uncovered on
HIGH for 5 1/2 - 6 1/2 minutes. Stand 5 minutes before serving.
